Trouble believing it's more than just strong will

I am having some trouble understanding oral sensory processing disorder is more than just a control/mental/emotional issues related to food. Or, somehow unknowingly parents have contributed to their child's present problem with eating certain foods.
What I am looking for is some definitive studies on specifically oral sensory problems (extreme picky eating) in other cultures/countries.
